Muffin in a Cup – Morning Delight (no baking)

What if I told you that you can make a fresh muffin in a cup under 5 minutes without baking, using basic ingredients? Dreams come true, and here is a recipe for your next perfect morning delight. This is the courtesy of a Buymeapie.com blog.

Recipe 1 – Coffee Muffin in a Cup

Ingredients (for 1 muffin)

  • Flour (3 table spoons)
  • Dry instant coffee (1 teaspoon)
  • Cocoa powder (the one you use to make hot chocolate) – (2 table spoons)
  • Sugar (3 table spoons)
  • Soda (1/4 of a teaspoon)
  • Milk (2 table spoons)
  • Egg (1)
  • Olive oil (2 table spoons)
  • Chocolate chips used for baking (I added few spoons, optional)
  • Ice-cream (for decoration, optional)

Instructions

  • Mix all ingredients in a bowl (except for the ice-cream), stir well
  • Place everything in a cup (it is fine if it is only 60% of a cup, the substance will increase after heat)
  • Place in a microwave for 1.5 minutes to 2 minutes
  • Add ice-cream on  the top and enjoy!

Recipe 2 – Chocolate Muffin with Salted Caramel

Ingredients (for 1 muffin)

  • Flour (4 table spoons)
  • Sugar (4 table spoons)
  • Cocoa powder (3 table spoons)
  • Salt (1/4 of a tea spoon)
  • 1 Egg
  • Milk (3 table spoons)
  • Olive oil (1 table spoon)
  • Salted caramel (I used pieces of caramel used for baking and added some sea salt)

Instructions

  • Mix all ingredients in a bowl (except for the ice-cream), stir well
  • Place everything in a cup (it is fine if it is only 60% of a cup, the substance will increase after heat)
  • Place in a microwave for 1.5 minutes to 2 minutes
  • Add ice-cream on  the top and enjoy!
